Smokehouse Rules

We have added a smokehouse here at the farm. It's a small wooden building that we can currently cold smoke just about anything that will taste good with a smoked flavor. We are hoping that eventually, we can add a component to do hot smoking as well.

Our first experiments have been the meat products from our first pig. We have smoked bacon, ham, and made Canadian bacon. I am told by my Canadian friend that American Canadian bacon is very different from what she enjoyed in Canada. But, ours is very tasty and almost didn't make it to the fridge for future enjoyment. I can't wait to try smoking some gouda cheese or some duck breasts.

We are looking for two more piglets. We are smarter this time and we will be more careful about the breed we choose and the method of feeding. We placed an order for more chickens. The chicks will be arriving in 2 weeks, and ready for the table in about 8-10 weeks. I am sure we will smoke some chickens as well.

We have used hickory wood so far, and we will do the next ham with apple wood. Yum. There's so much I want to do here at the farm. I wish I could grow a money tree...preferable the $20.00 variety. But as we say, one thing at a time and we are getting there.
